Indikator mutu buah yang diamati diantaranya kadar vitamin C,\r\nkeberadaan kapang serta susut berat buah tomat varietas Servo pasca panen.\r\nJenis penelitian ini eksperimen menggunakan rancangan acak lengkap. Objek\r\nyang digunakan dalam penelitian adalah buah tomat varietas Servo pasca panen yang\r\nsudah matang (berwarna kuning menuju merah) dengan berat ± 20-70 gram. Tomat\r\ndiberi perlakuan menggunakan KMnO4 dengan cara 5 buah tomat dimasukkan ke\r\ndalam plastik High Density Polyethylene (HDPE) kemudian pada ujung plastik diberi\r\nbatu bata yang sebelumnya sudah dicelupkan dalam larutan KMnO4 selama 45 menit.\r\nTomat dibagi menjadi 6 kelompok perlakuan, yaitu kontrol (tanpa KMnO4),\r\nkonsentrasi KMnO4 115 ppm, 120 ppm, 125 ppm, 130 ppm, dan 135 ppm. Variabel\r\ntergayut pada penelitian adalah keberadaan kapang, kadar vitamin C, dan susut berat\r\nbuah tomat selama penyimpanan. Perlakuan dilakukan selama 6 hari. Hasil yang\r\ndiperoleh dianalisis dengan analisis Univariate dan dilanjut dengan uji DMRT\r\n(Duncan’s Multiple Range Test) untuk mengetahui beda nyata dari perlakuan.\r\nHasil penelitian menunjukkan bahwa pemberian KMnO4 berpengaruh nyata\r\nterhadap kadar vitamin C buah tomat varietas Servo, namun tidak berpengaruh nyata\r\nterhadap susut buah dan keberadaan kapang. Kapang yang teridentifikasi pada buah\r\ntomat varietas Servo diantaranya Aspergillus sp (3 isolat), Penicillium sp (4 isolat),\r\nTrichocladium sp (1 isolat) dan yang paling berpotensi sebagai perusak yaitu dari\r\ngenus Penicillium sp 1.\r\nKata kunci: Mutu buah, KMnO4, Tomat Varietas Servo, Kadar Vitamin C, Susut\r\nBuah"^^<http://www.w3.org/2001/XMLSchema#string> .
